Crisp Raw Apple Pie Recipe

This #vegan, #glutenfree, and #dairyfree Crisp Raw Apple Pie is a delicious and healthy alternative to the traditional Apple Pie we all love! I adapted this recipe from Maria Delcioppo in The New York Times. It was the first dessert I made when I went gluten-free a few years back when I began my battle against Auto-Brewery Syndrome (or Leaky Gut Syndrome). I brought it to a holiday party and the guests devoured it. It was only after did I tell them how healthy it was. I knocked their socks off! People naturally assume that vegan, dairy-free and gluten-free automatically means zero taste. The dates, pomegranates, cloves and cinnamon give the pie a Greek/Near East vibe. Best of all it's easy to make - takes about 20 minutes - and no baking involved. If you make it, please let me know how it came out and if you made any adjustments to suit your preferences. INGREDIENTS


Crust:

4 ozs walnuts or pecans

3.5 ozs shredded, unsweetened coconut

1 cup pitted Medjool dates

1 tsp vanilla extract

Pinch of salt

1tsp cinnamon

1/2 tsp ground ginger

1/2 tsp ground clove

olive oil for greasing


Filling:

1 cup pomegranates

1 apple (I prefer Green Apple)

1 tsp cinnamon

1.tsp vanilla extract

2 T chia seeds


Topping:

2 apples - peeled first, then sliced thin

1 cup walnuts or pecans

3 pitted Medjool dates

4 drops orange essential oil


PREPARATION


1.Crust - put all ingredients in food processor and process till well mixed and sticky. Grease a 10-inch pie pan with olive oil. Spoon crust into pan band pat firmly into place. Use your fingers to bring the crust up the sides of the pan all the way to the rim. 


2. Filling - pulse apple in food processor and pulse until finely chopped. Combine apple and pomegranates in a large bowl and mash with a fork. Add chia seeds, vanilla and cinnamon and mix well. Fill the pie crust with filling and even top with a rubber spatula. 


3. Topping - Use a mandoline to slice apples paper thin. (If you don't have a mandoline, you can slice by hand or pulse in food processor.) Layer the sliced apples on top of filling, in a circular, overlapping pattern. In food processor, combine walnuts, dates and orange oil and pulse until finely ground. Sprinkle the mix on top of the sliced apples. Serve cold.
